One of my birthday presents 12 years ago was an orchard. The Cowboy and I planted 1 cherry & 6 apple saplings as the first inhabitants of our new orchard. Over the years I have collected and created scads of recipes the make use of bushels and bushels of apples. This baked apple donut recipe is one of our favorites for breakfast.
1-1/2 cups all purpose flour
1/2 cup sugar (or Splenda)
1-1/2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. grated orange peel
1/8 tsp. nutmeg
6 tbsp. cold butter
1 cup finely chopped apple
1/2 cup vanilla flavored yogurt
1 egg, lightly beaten
topping: 1/4 cup melted butter
1/2 cup sugar mixed with 1/2 tsp cinnamon
Preheat oven to 375 and spray non-stick spray on donut pan (I got mine from King Arthur Flour's baker's catalog) http://www.kingarthurflour.com

In mixing bowl combine flour, sugar, baking powder, salt, orange peel,
& nutmeg.
Cut in cold butter with pastry blender until mixture resembles coarse
crumbs.
Combine apple, yogurt & eggs; stir into flour mixture, just until
moistened.
Spoon batter into donut pan (the batter is thick, so prepare to use your
fingers..mmm)
Bake for 15-20 minutes or until donuts spring back when lightly
touched.
While they're still hot, remove from pan, dip tops (the smooth side)
into melted butter then into sugar/cinnamon mixture.
Yield: 6
