Farm Girl Apple Butter

Of all the things I preserve, this is the Cowboy's favorite.  I use my crock pot & whatever apples I have on hand.  In our orchard we have Red Delicious, Golden Delicious, Earlyblaze, Red Rome Beauty, Arkansas Black, & Lodi.  I have experimented to see which variety is best...I can't tell.  I've heard that many people prefer golden delicious and jonathans mixed.  So for this recipe, use what you wish.

6 lbs apples, peeled, cored, sliced
1-1/2 cups sugar
2 tsp. cinnamon
1/2 tsp. ground cloves
1/2 tsp. allspice

In a crockpot, mix all the ingredients.  Cover and cook on low heat for 14 to 16 hours or until it's as thick as you like it.  I've cooked some of my batches for over 18 hrs.  Use a stick-blender to puree the apple butter until velvety smooth.  Pack while hot into 4 hot pint jars.  Process in a hot-water bath for 10 minutes.  Start counting the time after the jars are immersed and the water comes back to a rolling boil.
Makes 4 pints.

This is especially good on homemade biscuits.
