Oats & Peanut Butter Chewy Fiber Snack Bars

Welcome to today's episode of  Farm Girl's Kitchen.  I'm happy to be back.  Thank you all for joining me.

I've been itching to make a quick snack for the Cowboy and me.  We like both Quaker chewy bars and Fiber One bars, but we don't like the price...and sometimes we just don't want to drive to the store to satisfy the craving.  So I've let the creative juices flow and have come up with a combination bar that I'll call the Oats and Peanut butter Chewy Fiber Snack Bar...that's the best I can do for the moment.

Please help me welcome today's special guests:

Butter
Peanut butter
Honey
Brown Sugar
Vanilla extract
Salt
Oats
Bran flakes cereal & of course, Enameled Cast-iron Pot


Thank you all for coming to the kitchen today.  I learned backstage that you've selected your spokeswoman, Enameled Cast-iron Pot, to tell about your new roles.

Well, Enamel...may I call you that?  Start us off.


Thank you, Farm Girl, for inviting us to your kitchen.  We're so excited to be a part of the creativity that goes on here.  


Here's the recipe we're excited to be starring in (I'll name the cast in the order of appearance):


1/4 cup butter (please, real butter...no substitutes...eliminate fat somewhere else)
1/4 cup peanut butter (creamy today, but crunchy would be good too)
1/4 cup honey (use local honey, if you can)
1/2 cup brown sugar (light or dark, no discrimination here)
1/4 tsp. salt (kosher, iodized, sea salt...whatever)


Put these 5 darlings in me, the enameled pot, and stir until perfectly blended and sugar is dissolved...about 5 minutes on medium heat.  Our mixture could easily scorch, so please stir frequently.
Remove from heat and add:
1 tsp. PURE vanilla extract (why use imitation?....in the kitchen it's not the sincerest form of flattery)


To our hot mixture add:


2 cups rolled oats (Old-fashioned....we're all about old-fashioned)
1 cup slightly crushed bran flakes cereal (name brand, store brand...doesn't matter)
Stir together till all is evenly coated.  Spread mixture evenly in a greased 9x13 pan, pressing firmly with a rubber spatula.  As a wonderful option, press in about a 1/4 cup chocolate mini-chips...we didn't add the chocolate today...she had a previous engagement and couldn't join us in the pantry.
Chill the mix in the refrigerator for about 15 minutes.  Cut into squares or rectangles.  Store in an air-tight container.  Here's the finished product;  we're so proud....
We're already planning our sequel.  We're going to ask dried fruit, nuts and chocolate chips to join in the fun and be a part of a true all-star cast.
