Shepherd's Pie

I get a huge *yeah, I'm all that* feeling when I can scavenge the personal food supply and use up stuff and pull off some satisfying meals.  It's getting close to Mother Hubbard conditions in the kitchen, but I was able to find some key ingredients to pull together a super-easy Shepherd's Pie...

5 medium potatoes, peeled and cut into chunks
2 cloves garlic, minced
2 tbsp milk
3/4 cup shredded Cheddar cheese, divided
1-1/2 pounds ground chuck
1 medium onion, chopped
1 clove garlic, minced
1 package of steamable mixed vegetables, cooked
1/2 cup ketchup

Preheat oven to 375.  Spray 3 qt casserole dish with cooking spray.

In a pot of salted water, boil potatoes and garlic until potatoes are tender, mash.  Add milk and 1/4 cup of the cheese.  Stir to combine.  Set aside.

In a skillet or enameled pot, brown ground chuck, onion and garlic.  Add cooked vegetables and ketchup.  Pour the beef/vegetable mixture into the prepared casserole dish.  Spread the mashed potatoes evenly over the beef.  Top with remaining 1/2 cup cheese.

Bake at 375 for 30-40 minutes.
