Maple Walnut Oatmeal Cookies

As promised.....

Dessert from our Friday night date night (which I technically didn't make until Saturday because Cowboy was tired and he didn't want cookies until the next day.....so):

Maple Walnut Oatmeal cookies
(ps...these are from my secret signature collection....don't tell anyone)


Giant maple walnut oatmeal cookies


1-½ sticks unsalted butter
½   cup light brown sugar
1 cup pure maple syrup (the artificial stuff works too...but why go fake?)
1 egg
1 cup all purpose flour
½ teaspoon baking soda
½  teaspoon salt
1 teaspoon cinnamon
3 cups old fashioned oats
1 cup chopped walnuts, chopped however coarsely you desire


v  Preheat convection oven to 350.  Line cookies sheets with parchment paper.
v  In a large bowl, sift together flour, baking soda, salt, and cinnamon, set aside. 
v  Cream together butter and brown sugar until smooth and light colored.  Add egg, mixing until well blended.  Slowly add syrup until well blended.
v  Add dry ingredients to the creamed mixture, stirring just until mixed.
v  Stir in oats and nuts until evenly blended.
v  Using ice cream scoop, drop batter onto prepared cookie sheets placing cookies 3 inches apart (about 6 will fit on a sheet).  Lightly flatten tops of scoops.
v  Bake 13-15 minutes.  Let cool slightly on sheet, then remove to cooling racks.

yield:  1 dozen

I made a double batch.  We ate these until we were practically sick.  A real sweet young man from out here rode his 4wheeler over to see us...confessing that he could smell these cookies all the way from his house (a couple miles due south) haha  His mom even mentioned these cookies at church this morning!  They're good.  Good enough to share!!  If you have to.
